Ingredients
· 1 ripe banana, sliced
· 50 g vegan dark chocolate (at least 70% cocoa)
· ⅓ cup vegan double cream
· 1 tsp vanilla extract

Method
Step Summary: Blend, melt, whip, combine, and serve.
1. Blend: Add 1 ripe banana (sliced) to a blender and blend until creamy and smooth.
2. Melt: Chop 50 g vegan dark chocolate into chunks. Place the chocolate in a small saucepan over low heat. Stir constantly until fully melted, being careful not to burn it. Alternatively, melt in short bursts in the microwave, stirring between each burst. Allow the melted chocolate to cool to room temperature before using.
3. Whip: Pour ⅓ cup vegan double cream into a mixing bowl. Using a hand mixer, beat until thick and fluffy.
4. Combine: Add the cooled melted chocolate, blended banana, 1 tsp vanilla extract, and most of the whipped double cream (reserve a little for decoration if desired) to a bowl. Gently fold together until just combined.
5. Serve: Spoon the mixture into a serving glass. Decorate with the reserved whipped cream and a sprinkle of shredded vegan dark chocolate if you like.
