Fluffy Yogurt Pancakes

Ingredients
· 2 cups gluten free flour
· ½ cup dairy free yogurt
· 1 teaspoon baking powder
· ½ teaspoon baking soda
· 1 tablespoon powdered sweetener
· 2 eggs
· Pinch of salt
· 1 tablespoon oil (for frying)
Optional Toppings
· Dairy free yogurt
· Fresh fruit
· Honey
Method
1. Preheat a frying pan over a medium heat. When hot, add a splash of oil to the pan.
2. In a bowl, beat the eggs until well combined.
3. Add the dairy free yogurt to the eggs and mix.
4. In a separate bowl, combine the gluten free flour, baking powder, baking soda, powdered sweetener and a pinch of salt.
5. Add the dry ingredients to the wet mixture and stir until just combined.
6. Pour some of the batter into the frying pan, swirling to evenly coat the base. Fry over a medium heat.
7. Cook for about a minute, or until the underside turns golden. Flip the pancake and cook the other side until golden as well. Repeat with the rest of the batter, stirring the mixture between pancakes and adding more oil to the pan as needed.
8. Serve the pancakes immediately with your choice of honey, dairy free yogurt, fresh fruit or any other preferred filling.
